Why can’t any of these systems run off siphon?

With the liter or gallon flow rate I’d think with proper tubing you should be able to achieve the same or near same flow rate as a pump?

Yes, proper tubing can be able to run the system, but which systems you are asking against siphon? This is one of the type of Siphon system.
