Once I’ve harvested all the tomatoes, should I uproot the plant and plant from seeds again, or should I continue growing the tomato plant and it will produce more harvest?

If the plant is healthym then you never need to uproot, just keep it for growing tomatoes again and again. I always kept until it dies itself than uprooting.
